Stoplight Tomato Baked Eggs
You say tomato, I say tomahto. <--- The point is, a tomato can be whatever you want it to be, so long as your imagination is strong enough. I love this dish because it’s super easy to make, very aesthetically pleasing, and a wonderful recovery meal after an intense workout. The greens provide some powerful natural energy and the walnuts offer some brain boosting power to help keep the creative juices flowing all day. Let’s get to it.
Ingredients
- 3 large heirloom tomatoes (preferably 1 red, 1 green, 1 yellow)
- 3 eggs
- 2 cups of power greens
- handful of walnuts
- 1 avocado
- 1 lemon
- balsamic vinegar
- salt and pepper
Order of OperEATions
- Preheat the oven to 375F
- Cut a ~2” diameter circle from the top of each tomato and scoop out the insides, being careful not to pierce through the bottom.
- Crack an egg into each tomato, place on a baking dish and roast for 8-15 mins, depending on how well cooked you like your yolk.
- As the eggs are baking, slice up some avocado and toss your greens and walnuts in some balsamic vinegar with a splash of lemon
