Avocado Tuna Salad Stuffed Papaya
I love tuna salad, but I'm not the biggest fan of mayo... you're classic food catch 22. Luckily I'm a forward thinker when it comes to food so I didn't let my mayo aversion hold me back. I found that a mashed up avocado with some lemon juice and spices was a great alternative. Thus avotuna and crackers became a solid go-to post gym meal back in college when I needed that protein kick, yet was too hungry to cook anything. Then one magical day, I happened to have a papaya laying around after a particularly hot gym sesh. Perfect I thought, avotuna for dinner and papaya for dessert! As I cut the papaya in half, I couldn't help but to notice what a perfect bowl shape I had created... the rest is history.
Ingredients
- 1/2 ripe papaya
- 1 can tuna (preferable a nice sustainable brand)
- 1/2 avocado
- 1/2 lemon
- 1 tsp sambal oelek (or whatever hot sauce)
- handful of raisins
- salt and pepper
- plantain chips (optional, yet highly recommended)
Order of OperEATions
- Mix strained tuna, avocado, lemon juice, hot sauce, and salt and pepper in a bowl until well combined
- Stir in raisins
- Cut a papaya in half lengthwise and scoop out the seeds
- Stuff your papaya with the tuna mixture, grab a spoon and go!
