Apple Cinnamon Muffins

Fruit is undoubtedly my favorite food group, which is probably why I try to sneak it in to every meal, snack, dish, etc. I also have an affinity for baked goods, which is why you’ll often find me trying to combine the two. These apple cinnamon muffins happened by accident one chilly fall day in Denver and have quickly become one of my favorite fall go-to treats. They’re gluten free, low sugar, delicious, and nutritious!

Ingredients

  • 1 cup unsweetened applesauce
  • 1/2 cup gluten free all purpose flour
  • 1/2 cup coconut flour
  • 1/4 cup light coconut milk
  • 1 tbsp maple agave syrup
  • 1 tbsp chia seeds
  • 1 egg (go vegan, sub 1 flax egg)
  • handful crushed walnuts
  • handful of raisins
  • handful of mini chocolate chips
  • cinnamon
  • pinch of salt
  • coconut oil

Order of OperEATions

  1. Preheat the oven to 350F
  2. In a large bowl, mix applesauce, coconut milk, egg, and maple syrup until well combined.
  3. Mix in both flours and cinnamon until a slightly runny, but sticky dough forms. Fold in the rest of the ingredients.
  4. Use coconut oil to grease a muffin tin and evenly distribute the batter.
  5. Bake for 15-20 minutes depending on the size of your muffins.
  6. Brew some tea, and enjoy.
