Banana Guacamole
Sounds crazy, I know, but that’s what we do here at unconVEGETABLE. We take ordinary fruits and veggies and just get wacky. That’s just what happened here. I had some pickled jalepenos lying around and I thought to myself “hey, this banana might add just the right amount of sweetness to balance out this briny spice...” and guess what, I was right. Feel free to enjoy with sweet potato chips as I did, or pair it with some jerk chicken or ceviche, that’d be pretty bomb too.
Ingredients
- 1 banana
- 2 large avocados
- handful of pickled jalepenos (depending on how spicy you like it)
- 1 lime
- a few small tomatoes
- salt and pepper
Order of OperEATions
- In a large bowl, mash the banana and avocados with the juice from the lime until desired consistency is reached.
- Separately, chop the jalepenos and tomatoes into small, but chunky, guac-friendly pieces.
- Gently stir everything together with salt and pepper until you’re ready to guac’ n roll!
