Sweet Potato Nachos
Disclaimer*** I did not invent sweet potato nachos! In fact, I don't know who did. They’ve been floating around the internet for some time now so I decided to give them a try. As you might know, sweet potatoes are probably my favorite vegetables to cook with. Their nutrient profile, flavor, and all around versatility always makes them fun to work with. I love nachos, but too many corn chips usually don't agree with me. Same goes for lots of cheese, so here's my solution. You will enjoy, I promise.
Ingredients
- Two long skinny cylindrical sweet potatoes
- Jalepeno goat cheese
- Refried black beans
- Cilantro
- Avocado
- Sour Cream
- Salsa
- Tomatoes
- Jalepenos
Order of OperEATions
- Preheat oven to 425F
- Slice sweet potatoes into even ~1/2" thick rounds
- Toss raw potatoes with olive oil, salt and pepper and roast on sheet for 15-20mins per side
- Once the potatoes are cooked, top with goat cheese, jalepenos, and refried black beans
- Place back in the oven and broil until everything starts to brown, ~5mins
- Once finished, top with cilantro and serve with guac, salsa, and sour cream
- FIESTA!
